A quick note on the recipe: Any spicy seasoning you may have works great on this recipe! Feel free to go ahead and use it!
4 Large Sweet Potatoes
1/2 C. Olive Oil
1 1/2 Tbsp. Sugar
1 Tbsp. Salt (Omit if your seasoning is very salty, use 1 extra Tbsp. seasoning)
1 1/2 or 2 1/2 Tbsp. Spicy Seasoning (I used Mesquite Meat Rub. See recipe note above)
Preheat the oven to 450 degrees F.
Begin the arduous task of peeling the sweet potatoes. Cut them into a fry shape (google it).
In a large bowl, combine the potatoes with the olive oil, sugar, salt, and seasoning.
Spread the fries in one layer on a large baking sheet. You may need to use multiple baking sheets or do the fries in multiple batches. No need to grease the pan.
Bake the sweet potatoes for 25-30 minutes, turn the sweet potatoes over after the first 15 minutes or so. Keep an eye on the fries, because the may need less/more time to cook depending on how you cut them. Bake until they've reached the desired crispiness.
