A quick note on the recipe: this is one of those recipes where you can pretty much throw in anything you have in your fridge!
Ingredients
4 Large (6 or 8 inch) Flour Tortillas
1 Large Yellow Onion - Chopped
1 Lb. Cooked Chicken - Pulled Apart (a leftover rotisserie works great here!)
2 C. Frozen or Fresh Sweet Corn
1 Large Bell Pepper - Diced
8-12 Oz. Grated Pepper Jack
1 Bunch Fresh Cilantro - Chopped
Cooking Oil
Toppings (Salsa, guacamole, sour cream, etc...)
Steps
In a large frying pan with some cooking oil, fully cook the onion and pepper. While this is happening, cook the corn and prepare the rest of the ingredients.
Add a little more oil to the pan, and over medium heat place in the tortilla. Wait for 30 seconds, then heap in 1/4 of the cheese, chicken, peppers, onions, and cilantro. If 1/4 is too much (you need to flip the thing) use a little less.
Wait another 30 seconds, then fold one half of the quesadilla onto the other half. After a minute or until the side on the pan gets golden brown, flip the tortilla until the other side gets golden-brown.
Repeat this four times, adding more cooking oil each time. Plate up your quesadillas, cut them into triangles, and enjoy with salsa, guacamole, and sour cream!
