A quick note on the recipe: these cookies taste great with whatever you put in them! You can try chocolate chips, cranberries, apple chunks, walnuts, and so much more! Raisins are just a delicious place to start.
Ingredients
1/2 C. Packed Brown Sugar
1/2 C. Granulated Sugar
1 Stick (1/2 C.) Melted Unsalted Butter
1 Tsp. Vanilla Extract
1 Egg
1 1/2 C. All-Purpose Oats
1 C. All-Purpose Flour
1/2 Tsp. Baking Soda
1/2 Tsp. Ground Cinnamon
1/4 Tsp. Baking Powder
1/4 Tsp. Salt
1 C. Raisins
Steps
Preheat oven to 375 degrees Fahrenheit. Combine the sugars, butter, vanilla, and egg (there's nothing better than the smell of that).
Pour in the flour, oats, baking soda, baking powder, cinnamon, and salt. Stir until blended. By now you should have a tasty dough.
Stir in the raisins. Eat as much of the dough as you like to "make sure nothing is missing" or some other excuse like that. You may need to defend it from other attackers.
If you still have any left after eating it, drop the dough by rounded teaspoons onto an ungreased cookie sheet, around an inch and a half apart. You may need to bake the cookies in batches, depending upon the size of the tray.
Bake for around 8-10 minutes, or until golden. Enjoy immensely after cooling for a few minutes.
